- Add the tea to your brewing vessel.
- Pour over the water.
- Steep for 3 minutes.
- Strain the leaves.
- Re-steep up to 3 times, increasing the steep time by around 1 minute with each infusion.

- Add the tea to a bottle or pitcher.
- Add the water.
- Refrigerate for 12 hours.
- Strain the leaves.
- Serve over ice if desired.

Gong fu brewing

Steps
Multiple short infusions reveal the tea’s evolving character over the course of a session.
- Add the tea to a gaiwan or teapot.
- Pour over hot water and immediately discard the first infusion (optional rinse).
- Pour over fresh water.
- Steep the first infusion for around 25 seconds.
- Increase the steep time by around 5 seconds with each infusion.
- Continue brewing until the tea loses flavor, typically around 7 infusions.

- Use these parameters as a starting point, then adjust them to suit your taste.
- If the tea tastes weak, try using a little more tea before increasing the steep time.
- This tea works particularly well as a cold brew and often becomes noticeably sweeter.
- Gong fu brewing tends to highlight more floral and aromatic notes.
- The leaves can be re-steeped multiple times.
